Amarillo is typically
considered to be an aroma variety, though with moderately high alpha acids and
low cohumulone, it is also an excellent bittering hop and thus an ideal
all-rounder. It is certainly one of the more competent varieties to make a
single-hop beer out of. Amarillo is in the top 10 hop varieties used in the
craft-brewing industry and understandably popular amongst home-brewers as well.
Unlike most big US hops, Amarillo has a fairly high proportion of farnesene in
the aromatic oils profile. Farnesene is generally associated with certain
floral and citrus notes.
